Grilled Smash Burgers

2 lbs Ground Chuck

1/2 lb Ground Brisket

1/2 lb Ground Short Rib

3 Tbs Big Swede Bad Ass Beef Boost

Brioche Buns

2 Tbs Butter

1 1/2 Cup Crispy Onions

American Cheese

Duckfat Spray


2 Egg Yolks

2 Garlic Cloves, finely minced

1 tsp Dijon Mustard

2 Tbs Lemon Juice

1 tsp Kosher Salt

1/2 cup Vegetable Oil

1/2 cup Extra Virgin Olive Oil


1Using a large whisk, combine the egg yolks, garlic, Dijon mustard, lemon juice, and salt in a medium bowl. Whisk constantly and add a few drops of vegetable oil to the egg mixture. Continue adding drops and whisking until the mixture starts to thicken. When well combined, add the vegetable oil in a thin stream, always whisking. Continue with olive oil. Set aside in the fridge.

2Mix the ground meat with the Big Swede BBQ Bad Ass Beef Boost or your favorite umami seasoning. Loosely roll and pack the ground meat mixture into small balls, about 2-3 ounces for each burger.

3Set your griddle to really hot or place a large cast iron pan on a hot grill, about 650 degrees or 343 degrees celsius.

4Place the balls on the griddle and smash with a firm spatula or burger press to your desired thinness. Flip the burger after about 90 seconds and sprinkle with additional Big Swede BBQ Bad Ass Beef Boost.

5Add a slice of American cheese to each burger patty.

6While grilling the burgers, melt the butter on the griddle and toast the cut side of the burger buns in the butter until golden brown. Remove when ready.

7Spread a healthy amount of garlic aioli on the bottom bun, then place 2-3 patties with cheese on top. Sprinkle some crispy onions on the patties and then place the top bun on top. Serve immediately.
